For evenings when you need dinner in a rush with a few easy ingredients, try these quick and delicious chicken breasts with fresh vegetables and a creamy Alfredo sauce. The addition of fresh mushrooms and the refreshing burst of citrus from the lemon brings this dish together beautifully.

8 oz. mushrooms, halved
1 Tbsp. olive or cooking oil
1 lemon
3 cups fresh broccoli florets
1 10-oz. container refrigerated light Alfredo pasta sauce
directionsSeason chicken with salt and pepper. In large skillet brown chicken and mushrooms 4 minutes in hot oil, turning chicken halfway through.
Meanwhile, shred 2 teaspoons lemon peel; set aside. Slice lemon. Add broccoli and lemon slices to skillet. Cover; cook 8 minutes or until chicken is done (170 degrees F on an instant-read thermometer).
Place chicken and vegetables on plates. Add Alfredo sauce to skillet; heat through. Serve with chicken. Add lemon peel and pepper.

1 small red onion, cut into thin wedges (1 cup)
2 cloves garlic, minced
1 Tbsp. olive oil
2 cups Shredded Beef Master Recipe (see recipe below)
1 14.5-oz. can Mexican-style stewed tomatoes, cut up
1 cup frozen whole kernel corn
1 cup canned black beans, rinsed and drained
2 tsp. chili powder
1/2 cup seeded and chopped cucumber (1 small)
1/2 cup peeled and chopped jicama
1 Tbsp. snipped fresh cilantro
6 7- to 8-inch flour tortillas, warmed*
1/2 cup dairy sour cream and/or purchased guacamole

In a large skillet, cook onion and garlic in hot oil over medium heat about 4 minutes or until tender. Stir in shredded beef, undrained tomatoes, corn, beans, and chili powder. Bring to boiling; reduce heat. Simmer, uncovered, about 5 minutes or until heated through and desired consistency.
Meanwhile, in a small bowl, stir together cucumber, jicama, and cilantro. Divide beef and vegetables among tortillas. Top with cucumber mixture and sour cream and/or guacamole. Makes 6 servings.
* To warm tortillas, wrap in foil and place in a 350 degree F oven for 10 minutes.
Shredded Beef Master Recipe Trim fat from a 3 to 3-1/2 pound boneless beef chuck pot roast. If necessary, cut beef to fit a 4- to 5-quart slow cooker. Place 2 large onions, cut into thin wedges and 2 cloves garlic, minced in the cooker. Top with beef. In a medium bowl, combine 1, 14-ounce can beef broth, 1 tablespoon Worcestershire sauce, 2 teaspoons dry mustard, 1 teaspoon dried thyme, crushed; 1/2 teaspoon salt, and 1/4 teaspoon cayenne pepper. Pour over beef in cooker. Cover and cook on low-heat setting for 11 to 12 hours or on high-heat setting for 5-1/2 to 6 hours. Remove beef and onion from cooker, reserving juices. Using two forks, shred beef, discarding any fat. Skim fat from juices. Add onion to beef; add enough juices to beef to moisten. Place 2-cup portions of beef in airtight containers and refrigerate for up to 3 days or freeze for up to 3 months. Makes 6 cups.
California Sushi Rolls
Your teens will love to try sushi making at home with a variety of tasty fillings. Assemble your favorite flavors of vegetables including tiny sliced carrots, zucchini, and cucumber sticks, along with crab meat, cooked shrimp, or smoked salmon. The rice filling may be made ahead and refrigerated, ready when you are. Invest in a bamboo mat for easy rolling of your California sushi rolls.
ingredients
2 sheets nori (seaweed) (each about 8 inches square)
1 recipe Sushi Rice Filling
Desired fillings (such as small carrot, zucchini, or cucumber sticks; avocado slices; flake-style imitation crab meat; smoked salmon (lox-style); and/or small peeled, deveined, and cooked shrimp)
1 recipe Honey Ginger Sauce
directions
Lay seaweed on a sushi mat lined with plastic wrap; with damp fingers, spread 1 cup of the Sushi Rice over each sheet to within 1 inch of the edge at one end. Arrange desired vegetable or seafood fillings just below center.
Roll seaweed toward the 1-inch unfilled edge. (To shape a tight even roll, place your hands under the edge of the mat closest to you. While carefully lifting the edge of the nori, roll the rice-topped seaweed away from you.) Press unfilled edge over top, brushing with water to seal, if necessary.
Cut each roll into 6 pieces; arrange on a platter. If desired, cover and chill for up to 4 hours. Serve with Honey-Ginger Sauce.
Makes 12 sushi rolls
Sushi Rice Filling: In a fine-mesh sieve wash 1/2 cup short grain rice under cold running water, rubbing grains together with your fingers. In a small saucepan combine rinsed rice, 1 cup cold water, 2 tablespoons rice vinegar, and 1/4 teaspoon salt. Bring to boiling; reduce heat. Simmer, covered, for 15 minutes (rice should be sticky). Remove from heat; stir in 1/4 cup finely shredded carrot, 1 tablespoon sugar, and if desired, 1 tablespoon sake or dry sherry. Cover and cool about 45 minutes or until room temperature. (Rice can be prepared ahead; cover and chill for up to 3 days.) Makes about 2 cups.
Honey-Ginger Sauce: In a small saucepan combine 1/3 cup honey, 1/4 cup water, 2 tablespoons plum sauce, 2 tablespoons soy sauce, and one 2-inch piece fresh ginger, peeled and thinly sliced. Bring to boiling, stirring frequently; reduce heat. Simmer, uncovered, for 15 to 20 minutes or until slightly thickened. Strain into a small bowl; cool. Cover and chill. Makes a scant 3/4 cup.
